PUMPKIN CHOCOLATE CHIP CAKE

Grease & flour an angel or bunt pan and bake at 350 for 65-70 minutes

For cupcakes, fill 3/4 of cup and bake at 350 for 25 minutes.

 

Combine

2 2/3 c sugar
1 1/2 tsp salt

Add

4 eggs 1 at a time

Blend

1 c. crisco oil

Add & beat 2 minutes

3 1/3 c flour
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp allspice
1 tsp cinnamon
add & beat 2 minutes
1 can pumpkin
2/3 c water

Fold in chocolate chips (don't seem to have the amount, try 1/2 - 3/4 cup and add more if it doesn't seem like enough)

Glaze

Orange juice and confectioner sugar

Start with 1/2 c sugar and add OJ a little at a time till it is pouring consistency. This is optional.

Makes 17 cupcakes

Combine

1 1/3 c sugar
3/4 tsp salt

Add

1/4 tsp baking powder
1/4 tsp allspice
1/2 tsp cinnamon

add & beat 2 minutes

1/2 can pumpkin
1/3 c water
Fold in chocolate chips (don't seem to have the amount, try 1/2 - 3/4 cup and add more if it doesn't seem like enough)

1/2 Recipe without sugar (slowly converting to MAF compatible version

Combine

1 c honey
3/4 tsp salt

Add

2 eggs 1 at a time

Blend

1/2 c coconut oil

Add & beat 2 minutes

1 2/3 c flour (plan to slowly remove this to see effect)
3/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp allspice
1/2 tsp cinnamon

add & beat 2 minutes

1/2 can pumpkin
4/3 tbsp water (was 1/3 c water - 1/4 c to compensate for honey)
Fold in chocolate chips (don't seem to have the amount, try 1/2 - 3/4 cup and add more if it doesn't seem like enough)
