Ice Cream Recipe

The ice cream recipe we used to use has uncooked eggs and we aren't supposed to do that anymore. This is one we have used since and is good. You can add small pieces of fresh fruit - strawberries, peaches, etc and it's good. If you like pineapple you have to use canned.

Mix together 1 quart heavy cream, scalded, and 3/4 cup sugar. Cool and then blend in 1 and 1/2 tablespoons vanilla and 1/8 tsp salt.

Pour into cylinder and secure cylinder in freezer. Pack freezer about 1/3 full of ice and add some rock salt, more ice, salt, etc. When packed allow it to sit for 3 or 4 minutes, then begin turning slowly until a slight pull is felt then increase turning speed until very hard to turn. Wipe top of cylinder carefully so not to get any salt in when top is removed.

Fudge Sauce

1 T margarine or butter
2 squares unsweetened chocolate
1/3 cup water
1 cup sugar
2 T corn syrup
1 tsp vanilla

Melt butter and chocolate together over low heat
Add water, sugar and syrup
Cook : stir carefully until sugar dissolves and mixture boils
Boil gently for 5 minutes, cool slightly and add vanilla
